This versus These & That versus Those

this + singular noun

e.g. This book is fascinating.

- it can also function as a pronoun.

e.g. I like this. (book) (the speaker near the book)

these + plural noun

e.g. These books are fascinating.

- it can also function as a pronoun.

e.g. I like these. (books)

that + singular

e.g. That article is controversial.

- it can also function as a pronoun.

e.g. I'm not interested in that. (article) (the article is quite far/far from the speaker)

those + plural noun

e.g. Those controversial issues make me sick.

- it can also function as a pronoun.

e.g. Those (issues) just make me sick.

Yes, it is true that we use the pronoun it when referring to an animal. However, some people nowadays consider their pets as part of the family, so they tend to use he or she. You have to remember that the listener should know you're referring to a pet by establishing it in the context of your conversation, so he/she won't get confused.

e.g.
My male cat likes to drink milk; it/he takes milk once a day.

These cats (cats are near you) are wonderful!

Those cats (cats are far from you) lost their mother when they were just kittens.
