ELLIPSIS is a set of dots (...) indicating the ommission from speech or writing of a word or words that are superfluous or able to be understood from contextual clues.
We use ellipsis:
-to indicate confused or worried pauses in speech.
e.g.
"But... I'm... oh well, okay then!'
"So... are you saying that you... you weren't honest with me?"
- to indicate a trailing off.
e.g. "I love...," Erlie said, staring out the window.
I really did not know that the 3 dots (...) were called ellipsis.

yeah...she is amazing...
may i add that you use three dots if you're omitting something in the middle of the sentence you're quoting, and four dots if you're omitting from that point to the end of the sentence you're quoting.
in creative writing, sometimes you also use ellipses to create drama when you want to indicate a pause. depending on the scenario, sometimes you want to illustrate a character thinking out loud then suddenly becoming lost in thought, such as:
"I'm pretty sure I had this done but...."
as has been pointed out by ctivnan, it relies on contextual clues. there are also other uses.
