Knowing your count and noncount nouns will help in understanding the usage of 'amount' and 'number'.
AMOUNT precedes noncount nouns, while NUMBER precedes a count nouns.
e.g.
amount of food/ information / stuff / water / sand / flour / furniture
a number of bottles / pens / dictionaries / people / chairs / tables

I'm unfamiliar with the terms count/noncount nouns, could you explain the difference between common/proper nouns and count/noncount nouns for me, Please?

Proper Nouns
- these are nouns that refer to or names a specific person, place, or thing. You can identify them easily because they start with capital letters. co
common nouns
- these are the nouns that refer to / name a general person, place, or thing. They are usually ot capitalized unless they start a sentence.
e.g
Proper: Manila
Common: city
Proper: Macintosh
Common: computer
Proper: English Coffee
Common: community forum

Yes erik, plurality is in effect because when we refer to 'number' we use plural count nouns. For 'amount' we use noncount nouns which are always singular in form.
